Guests say the host was knowledgeable and shared interesting details about the local project and neighborhood, though the introductory talk could be a bit shorter. Participants appreciated the hands‑on guidance, learning cooking techniques they can replicate at home. The class focused on simple, approachable recipes that fit everyday cooking, leaving guests feeling confident to recreate the dishes on their own.
At the Vía Cocina training centre, you'll receive a tour of the professional kitchen, training spaces for low income entrepreneurs, our organic rooftop garden with breathtaking mountain views, and all of the self-constructed spaces in between. Chef Brian will share details of the social transformation projects and infrastructure in Medellin's up and coming Buenos Aires neighbourhood, where you'll be far from the touristy parts of town, in a safe area bustling with everyday Colombian life.
After picking some herbs and vegetables from the garden, we'll head to the kitchen, put on our aprons and get down to some hands-on cooking, where techniques, tips and tricks will be shared from Brian's travels around the world's kitchens. We'll prepare a delicious meal combining less common Colombian dishes with an exotic fruit tasting, and classic Vía Cocina recipes that transform local ingredients into fusion dishes with Thai and Indian origins. Vegetarian and vegan options are always available.
