What to Expect

Our goals are to share the local and Mexican culinary art and to understand the effort and value that traditional cooks put on every dish. What better way to do it than by preparing them together!

We will begin with a tour of the beautiful Mercado Hidalgo and its surroundings, selecting the best ingredients we will use for the preparation of a tasting menu that includes several stops through Mexican cuisine, using local Guanajuato inputs.

Then we will move to my kitchen, which will become yours, where we will prepare the dishes together. You will gain knowledge of their history and I will give you tips for their preparation.

While we cook, we will taste traditional drinks (with and without alcohol) as my grandmother did and my mother does, traditional cooks. You will witness the love that we will put into to the food we cook, the unforgettable and enriching experience for your soul, and together we will transform what the earth gives us!

• Guacamole
• Molcajete sauce
• Tacos (dry meat) or aguachile (raw shrimp)
• Tamales
• Sopes or huaraches (made with corn dough)
• Green pozole
• Pambazo (bread filling, marinated and fried) or enchiladas (filling tortilla, marinated and fried)
• Adobo (with pork) or Fish (fish wrapped in corn husks)
• Amaranth dessert

Schedule

• 11:00 am: Meet at the main entrance of the Hidalgo market.
• 11:10 am: Begin our tour of the market, showing them the most traditional places.
• 11:55 am: Finished the tour in the market, and we will move to my house.
• 12:15 am: Arrive at my house.
• 12:20 pm: Have a brief introduction and begin to prepare for the class.
• 12:30 pm: Start our class while we drink something.
• 5:00 pm: Finish the experience.
