One Week Cooking and Italian Language Course

What to Expect

Accademia Leonardo Salerno has launched a project called Cucina di Classe. The project includes a course with Italian lessons held in the morning followed by cooking classes taught by chefs who have national and international experience in the field, from the television show Gambero Rosso to the Eden Hotel in Rome and the Caruso Hotel in Ravello.

The Italian language classes are held first in the morning and are designed to introduce students to Italian grammar and vocabulary for the kitchen environment. Classes are taught by certified Italian language teachers able to deal with any level and cultural background. 

All you learn in the morning will be tested during the following cooking session, where our skilled professional chefs will lead you through the acquisition of theoric and hands-on knowledge. An immersive experience learning about chef ethic, choice of the ingredients, cooking techniques and  the art of plating.  

The class is suitable either for beginners, amateurs or professionals who want to sharpen their skills in Italian cooking with the help of experienced, local, professional chefs, sharing their tricks acquired during their daily professional practice.

However, we really don't want you to miss what our land has to offer. 

Daily Classes finish at 1:30 pm during your free time we strongly suggest you to go around and enjoy the culinary, artistic, natural beauties of our city: Salerno. Or take a tour of the famous Amalfi Coast, check our neighbor islands Capri, Ischia or the regional capital: Naples. All easily reachable using sea or land public transports. 

Our staff at the school will be more than happy to share information or assist you in planning the diverse experiences that our beautiful area has to offer.

All the classes are held in our theory class and professionally equipped cooking class and will run as follow:

Lesson 1 - Monday:

•  9:00 am Italian course: Italian language used in the kitchen (verbs, adjectives and substantives used in the kitchen) and tools used in the kitchen
• 11:00 am: Coffee break
• 11:15 am: Jobs and professions: The chef
• 11:30 am Cooking lesson: Land and seafood starters
• 1:15 pm: Food tasting
• 1:30 pm: End of the class 

Lesson 2 - Tuesday:

•  9:00 am Italian course: The history of pasta and pizza, the different types of pasta, pizza and festivities
• 11:00 am: Coffee break
• 11:15 am: Cooking lesson: Hand-made pasta and pizza
• 1:15 pm: Food tasting
• 1:30 pm: End of the class 

Lesson 3 - Wednesday:

•  9:00 am Italian course: Read recipes, give instructions, describe ingredients, as well as read and understand a menu
• 11:00 am: Coffee break
• 11:15 am: Cooking lesson: Rice and risotto
• 1:15 pm: Food tasting
• 1:30 pm: End of the class 

Lesson 4 - Thursday:

•  9:00 am Italian course: Express quantity, types of fish and the Mediterranean diet
• 11:00 am: Coffee break
• 11:15 am: Cooking lesson: Fish
• 1:15 pm: Food tasting
• 1:30 pm: End of the class

Lesson 5 - Friday:

•  9:00 am Italian course: Culture and taste
• 11:00 am: Coffee break
• 11:15 am: Cooking lesson: Meat
• 1:15 pm: Food tasting
• 1:30 pm: End of the class

Schedule

The course runs from Monday to Friday from 09:00 am to 1:15 pm.
